
Ingredients:
3 cups spinach
10 sliced strawberries
1/2 cup feta cheese
1/3 cup balsamic vinegar
1/4 cup extra virgin olive oil
1/2 a lemon
Salt & pepper (to taste)
Optional: pistachios

Steps:
Rinse spinach and strawberries and pat dry
Slice strawberries and toss them with spinach in a large bowl
Sprinkle feta (+ pistachios) in bowl as you continue to mix the salad
In small container, mix vinegar and olive oil
Add lemon, salt and pepper to dressing (tip: keep sauce in separate container until right before you serve the salad so as to prevent the spinach from becoming soggy)
I debuted this salad at a potluck last year and it was a huge hit. It has been my go-to summer potluck item for a while because it’s so simple to make and is also very tasty. If I want to change it up a little, I add watermelon instead of strawberries to make it more refreshing!

I?ve been making a variation of this salad all summer! I use spring mix, sliced strawberries, slivered almonds, goat cheese or feta cheese, and a salad dressing made with red wine vinegar and olive oil. Now I want to try it with pistachios and a balsamic vinegar dressing! That sounds so good.
