
You guys – these are the best lemon bars EVER! I am not usually a fan of tart desserts – I’m more of a chocolate girl myself – but I will always make an exception for these. They’re perfect to serve as a dessert with coffee or tea at a party, bring to work for a fun treat, or just keep in your home all to yourself! Because trust me, you’re going to want to.
Tip: A stand mixer is highly recommended!
Serving size: Approx. 16 medium-size lemon bars
Ingredients:
Bottom crust
1 cup butter
2 cups flour
0.5 cups powdered sugar
Top layer
2 cups sugar
4 tablespoons flour
4 eggs
1 teaspoon baking powder
9 tablespoons lemon juice
(tip: use regular & Meyers lemons for natural sweetness)
1 teaspoon lemon zest
Steps:
Preheat oven to 350 degrees
Mix together butter, flour and powdered sugar
Pat down evenly in pan (dip fingers and palms in flour so the batter doesn’t stick to your hands)
Bake for 20 minutes
While the filling is baking, start preparing the top layer:
Combine sugar, flour, and baking powder and stir evenly
Mix in eggs, lemon juice, and lemon rind
When the filling is done, pour the top layer mixture directly on top of it, and bake for another 25 minutes
Optional: sprinkle with powdered sugar when cool
