Green Pancakes

Serving size: Approx. 7 medium-sized pancakes 

Ingredients:

1 cup rolled oats 

1 ripe banana 

1/2 cup raw spinach 

1.5 cups almond milk

Optional: cinnamon or vanilla extract to taste 

Steps:

Add oats and milk into blender, blend for approx. 10 seconds

Add banana and spinach (+ rest of ingredients), blend for approx. 10 seconds

Heat over a medium flame for 2-3 mins on each side, or until light brown 

Optional (recommended): add strawberries as a garnish 

This is a really quick and easy way to make a healthy breakfast when you want something simple but hearty. It’s easy to just pull from what you already have in the fridge and to personalize it how you like it. I love the texture the oats and bananas give, and I always add cinnamon for more flavor!

    I was skeptical at first when you said green pancakes but they sound delicious and I will have to make them.
