
I like to think of this recipe as a new and improved version of the salad I created last summer (see recipe here). As you can see, I’m a huge fan of strawberries and take full advantage of their peak seasons! I threw this salad together (minus the strawberries) when I was creating a three-course meal for Father’s Day (see here) and it has since become our favorite! So, I figured why not share this simple, yet utterly delicious recipe.
Ingredients:
4 cups arugula
1 cup halved strawberries
5 tablespoons raw pumpkin seeds
3 tablespoons parmesan cheese
1/2 cup olive oil
1 tablespoon balsamic vinegar
1/2 lemon
Salt + pepper (to taste)
Steps:
Rinse arugula and strawberries and pat dry
Toss arugula, pumpkin seeds and 2 tablespoons parmesan cheese in large bowl
In a small container, mix olive oil, balsamic vinegar, lemon juice, salt and pepper
(tip: keep the dressing in a separate container until right before you serve the salad so as to prevent the greens from becoming soggy)
Sprinkle the strawberries on top, and then the rest of the parmesan
Again, such a simple recipe, but one that is now a staple in our family’s kitchen.
